Frosting & Fillings


Use for Frosting or Filling

American Buttercream - very white originally but can be colored to any hue - extremely sweet - holds up well in hot temperatures - does not need to be refrigerated - no eggs or butter
Swiss Buttercream - off white in color - mild flavor but very smooth texture - made with real butter so may melt in hot/humid climates - contains eggs
Chocolate Ganache - can be poured for a smooth shiny finish or whipped to thicken for fillings
Mint Chocolate Ganache
Cherry Chocolate Ganache
- flavored with almond extract
Cream Cheese - must be refrigerated prior to serving
Peanut Butter
Flavored Buttercreams
- either buttercream - many different flavors available (most fruit flavors, chocolate, candies: candy corn, lemon drops, any hard candy etc.)
German Buttercream -
custard based buttercream – must remain cold to hold shape – great as a filling

Bavarian filling
Raspberry filling
Strawberry filling
Caramel
- centers for cupcakes
Lime Curd - can be made with or without lime zest peal
Lemon Curd
- can be made with or without lemon zest peal

Icing Only

Fondant - vanilla fondant has a consistency and taste of thick marshmallow - will be adhered to the cake with a buttercream
Chocolate Fondant
- taste somewhat like Tootsie rolls - will be adhered to the cake with a chocolate ganache or buttercream
